PICKLED PIKE FILLETS | |
White vinegar Salt Onion Vinegar (cider) Sugar Pickling spice Bay leaf Black peppercorns Stick of cinnamon Cut into bite-size. Place in small fruit jar. Cover with a mixture of white vinegar and enough plain salt to make a cloudy solution. Let stand at room temperature for 10 days. Rinse fish well. Add onion. Make a mixture of 1 cup cider vinegar, 1 cup sugar, 1 tablespoons pickling spice, 1 bay leaf and a couple peppercorns, a very small piece of stick cinnamon. Bring to a boil until sugar dissolves. Cool. Pour over fish and onion. Cover and refrigerate. Ready to eat in 24 hours. |
