CHICKEN FRIED RICE 
2 c. cooked rice (UNCLE BEN'S®)
1 c. celery, chopped
1 box peas & carrots, thawed
6 chopped green onions
Salt to taste
3 boneless, skinless chicken breasts
1 sm. can water chestnuts
1 lg. can sliced mushrooms, drained
2 tbsp. soy sauce

Cook rice according to directions and set aside. Fry chicken cut into small pieces until tender. Add celery, peas and carrots and water chestnuts and continue to fry until they are tender. Add onions, mushrooms, salt and soy sauce. Add all this to rice and fry just enough to mix and heat through.
