BREAKFAST CASSEROLE 
1 (24 oz.) pkg. potatoes O'Brien
2 c. diced ham
2 c. grated Cheddar cheese
3 tbsp. flour
1 tbsp. dry mustard
8 eggs
1 c. milk

Prepare potatoes O'Brien as directed on package and place in a buttered 3 quart baking dish. Spread ham over potatoes; spread cheese over ham. Combine flour and mustard, sprinkle over cheese. Beat together eggs and milk, pour over casserole mixture. Refrigerate overnight. Bake uncovered at 350 degrees for 60 minutes. Serve with salsa, if desired. Serves 8 to 10.
