ZUCCHINI LASAGNA 
1 lb. hamburger
1 (28 oz.) can tomatoes
1 (4 oz.) can mushrooms
2 tsp. Italian seasoning
8 oz. Ricotta cheese
2 lg. zucchini, sliced lengthwise about 1/4" thick
1 med. onion, chopped
1 (6 oz.) can tomato paste
1 tsp. garlic powder
6 oz. mozzarella cheese
2 oz. Parmesan cheese

Brown hamburger with onion; drain. Add tomatoes and liquid, tomato paste, drained mushrooms, garlic powder and Italian seasoning. Cover and simmer 1 hour. Steam or microwave zucchini until barely fork-tender.

In a 9 x 13 inch Pam sprayed dish, place the following: 1/2 meat sauce, zucchini sliced, 1/2 cheeses, 1/2 meat sauce and 1/2 cheeses. Cover and bake at 350 degrees for 1 1/2 hours. Remove cover last 10 minutes. Serves 12. 220 calories serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
