VEGGIE MEDLEY 
1 tbsp. butter
1 med. onion, diced
1 pkg. frozen vegetables (carrots, broccoli, cauliflower, cooked)
1/2 c. Minute Rice
1 can cream of celery soup
8 oz. Velveeta cheese

Saute onion in butter. Cook the frozen veggies. Add onion to veggies. Add 1/2 cup rice, soup, Velveeta cheese to veggies. Stir and cook 10 minutes at 350 degrees. Stir and cook 10 minutes more. (Can add chunks of chicken also.)
