SWEDISH RICE PUDDING 
1/2 gallon WHOLE milk
1 c. rice
3 egg yolks
Salt
Butter
1 c. sugar

Place a dash of butter in bottom of large heavy pan. Melt and swish around on sides. Pour 1/2 gallon milk, 1 cup rice and salt. Cook until rice is done, stirring often (about 45 minutes). Beat egg yolks, add sugar. Add a small amount of rice mix to eggs, then add to rice. Cook 2 or 3 minutes more. Remove from heat and add about a tablespoon butter. Cool. Serve with whipping cream (whipped) and cherries or serve plain!
