RHUBARB UPSIDE DOWN CAKE 
4 c. rhubarb, cut in about 1" pieces
1/2 c. sugar
1 tbsp. minute tapioca
1/2 pkg. either yellow or white cake mix

1. Wash and cut up rhubarb.

2. Mix with sugar and tapioca.

3. Follow directions on cake mix (using only 1/2 of mix). Make cake batter.

4. Put rhubarb, sugar and tapioca mix in bottom of pan, pour cake batter on top. Bake for 30-35 minutes at 350 degrees. Can be served warm or cold, plain or with ice cream, or whipped cream.
