1 pie crust
2 c. cooked sweet potatoes (about 3 potatoes skinned and mashed up)
1 c. sugar
2 eggs
2 c. milk (1 c. evaporated, 1 plain)
1 tsp. cinnamon
1 tsp. vanilla

Use mixer to beat sweet potatoes. Add sugar, eggs, and milk. Gradually add cinnamon and vanilla. Bake at 350 degrees for 45 minutes or until center is well set.
