RICE WITH CHILIES & SOUR CREAM 
3/4 c. rice (not instant)
2 c. sour cream
1 lb. Jack cheese (1/2 lb. sliced, 1/2 lb. grated)
Salt
1 (6 oz.) can peeled green chili peppers
Butter

Steam rice until all water is absorbed. Combine with sour cream and salt. Arrange half in casserole. Place slices of cheese in layer with green chilies. Top with rice. Dot with butter and top with grated cheese. Bake 30 minutes at 350 degrees. Can be made ahead and frozen.
