GRANDMA'S OLD MONTEREY TAMALE PIE | |
1 c. yellow corn meal 1 c. milk 1 can cream style corn 1/2 tsp. chili powder (more if desired) 1 (6 oz.) can tomato paste + 1/2 can (3 oz.) water 2 onions 1 lb. ground round 2 eggs, slightly beaten 1 can pitted black olives, drained Cook corn meal, milk, corn, chili powder, tomato paste and water very slowly in double boiler (preferably) about 45 minutes. If too thick, add more water. In a frying pan, add 2 tablespoons olive oil and 2 yellow onions, chopped fine (can also use red onions, if preferred), 3 cloves garlic, chopped fine. Brown until light brown, add one pound ground round and cook until pink disappears. |
