GRANDMOTHER'S CARROT CAKE 
2 c. sugar
2 c. flour, sifted
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1 1/8 c. oil
4 eggs, beaten
3 c. carrots, finely chopped

Mix first five ingredients. Add oil and eggs. Fold in finely chopped carrots. Bake at 350 degrees for 20 to 30 minutes. Makes three 8" layers. If baked in a sheet pan, increase baking time to 1 hour.

FILLING:

1 stick butter
1 (8 oz.) pkg. Philadelphia cream cheese
1 pkg. powdered sugar
2 tsp. vanilla

Cream together butter and cream cheese and slowly add powdered sugar and vanilla. Spread on cake and top with chopped walnuts or pecans.
