GERMAN POTATO SALAD 
8 or 10 med. size red potatoes
1 onion, cut in small pieces
3/4 c. sugar
1/2 c. vinegar with 1/2 cup water added
1 c. celery, cut into small pieces
Salt
Pepper
1 tbsp. flour
3 strips bacon, cooked and crumbled

Wash and cook the potatoes without peeling. Peel and slice the cooked potatoes. Make a layer of 1/3 of the potatoes. Add 1/3 of the onion and celery and sugar, salt and pepper. Make 3 layers, adding 1/3 of each ingredient to each layer. Add crisp bacon to each layer.

Add 1 tablespoon flour to the bacon grease and add the vinegar and water to make a sauce to pour over the potatoes after all ingredients have been added. Stir in the sauce well and serve warm.
