BACON AND POTATO OMELET 
2 slices bacon
2 sm. potatoes, diced sm.
3 green onions
1 tsp. butter
Salt & white pepper

Melt butter in a pan and add bacon, potatoes and onions, seasonings; cover pan and cook slowly, 7 to 8 minutes, until potatoes and onions are tender and lightly browned. Stir occasionally. Make plain omelet and spoon in this mixture before folding.
