BAHAMAS PINEAPPLE SLAW 
2 red or green apples
2 tbsp. green peppers, chopped
1 sm. white cabbage, shredded
1 tsp. salt
1 tsp. sugar
2 tbsp. vinegar
4 tbsp. carrot, grated
6 slices fresh pineapple

Core and chop unpeeled apples. Mix with green pepper and cabbage. Mix salt, sugar and vinegar until sugar is dissolved. Pour over cabbage mixture, sprinkle with carrot and top with pineapple. Serve immediately. Serves 6.
