SUMMER SALAD 
Lg. pkg. cream cheese
8 oz. Cool Whip
Lg. bag coconut
8 to 16 oz. pineapple chunks, drained
8 oz. maraschino cherries
Lg. bag miniature marshmallows
Sm. bag walnuts, chopped or minced
Green, seedless grapes
Sugar substitute (to taste)

Whip cream cheese until soft. Blend in Cool Whip with spoon. Drain juice from all fruit and rinse maraschino cherries until all red coloring is gone. Fold all fruit into creamed mixture. Add remaining ingredients to mixture.

Proportions used are left to your discretion. Salad will be the consistency of potato salad and will be very thick with no liquid. Add coconut, marshmallows and grapes to your taste and to create thickness of salad. Can be served on lettuce leaf or in dish.
