PINEAPPLE UPSIDE DOWN CAKE 
2/3 cup butter
3/4 cup brown sugar

Place the butter and brown sugar in a frying pan and melt until it boils or bubbles. A cast iron pan works well because it's heavy and will be less likely to scorch.

1 can pineapple slices
maraschino cherries (enough to fill centers of pineapples)

Place pineapples in the butter and sugar mixture. Put cherries in the center of the pineapple. Cut the slices of pineapple into halves and line the sides of the frying pan with them (standing up on edge).

Prepare a box of yellow cake mix following the directions on the box to mix the batter (do not bake in a separate pan; follow instructions below).

Pour the batter over the pineapple and cherries.

Bake at 350°F. When the cake is done, loosen the edges with a butter knife. Remove from heat and allow to sit five minutes, then turn it upside down on a serving dish.

Optional: Instead of using a cake mix, you can prepare the batter from scratch using the recipe below, or any recipe for yellow cake.

Scratch Cake:

1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
2 eggs
1/2 cup oil
2/3 cup sugar
1/4 cup milk

Combine ingredients and beat 1 minute. Pour batter over pineapples and cherries (same as above). Bake at 350°F and follow same steps as above.

This is the best pineapple upsidedown cake ever! Every time I make it everyone cannot get enough of it! The cake is always gone within two hours of it being finished baking. I always add some of the pineapple juice in the cake batter, it gives it a nice extra juicer taste :) Thank you!

I used a can of crushed pineapple and skipped the cherries (didn't have them) and used the drained juice in the cake mix! Thanks so much for this recipe. Will be using it again!

The way everyone get gets pineapple is to use crushed pineapple, then all get some pineapple in their piece of cake.

I own an old recipe from an ex-wife. It uses yellow cake mix, adding pineapple juice instead of water. My recipe also calls for some amount of crushed pineapple added to the batter but I can't remember if it's half a cup or 3/4 cup. The crushed fruit does brighten up the taste in the end.

Okay, my cake is in the oven right now, I found a cast iron pan in our camping stuff took about 10 minutes of me scrubbing the pan before I felt comfortable to use it. The instructions were so simply, the preparation was fun, now I sit here after washing up the dirty dishes and waiting for the oven to do the rest, I hope that this will be the best pineapple cake I have made, oh I have made several in the past, but never looking as perfect as it taste, so hoping for this Easter day I have the whole perfect package cake to take to family Easter day dinner.

Thanks for a great recipe!! I made this for Father's Day and it was delicious! My first time making one and this recipe is super easy to follow. I used a box cake ad plan to make the scratch just to compare the two. Cute and delicious... Everyone thought I bought it from a store! Great taste, easy to follow directions, and delicious!

I don't scoff at those who use a cake mix but I do prefer to prepare a batter from scratch. I did use one of CM other yellow cake mix though called Easy Yellow Cake Mix. Very good.

FYI: I have used my share of cake mixes but again I just enjoy baking them from scratch with my children these days.

Made this tonight, I used canned pineapple chunks cause that's all I had.. sliced them in half and it was perfect!! Also I doubled the homemade cake recipe and cooked in long glass pan instead. My kids kept asking for more! Recipe def a keeper!

I had never made a pineapple upside down cake before and decided to give it a try. This was TRULY DELICIOUS!!! I used the box cake but substituted the water for pineapple juice from the can of pineapples. Made it even better in my opinion. Also made it once in Bundt form, muffin form, and in circular one. All turned out great!

Great when use old fashioned cast-iron pan. Works really slick. Presentation was wonderful and everyone wanted the recipe (& Frypan). Be quick in loosening the edges and turning over. Arrangement stays in place. Now I always have on hand pineapple slices and yellow cake mix! Delicioso
