CHICKEN CACCIATORA 
1 (4 lb.) chicken, cut in pieces
2 tbsp. olive oil
2 tbsp. butter
1 lg. onion, sliced
1 clove garlic, crushed
Touch of salt & pepper
Pinch dried basil
1 tsp. dried parsley
1 sm. can tomato paste
1 c. dry red cooking wine

Brown chicken parts on all sides in oil and butter using large heavy skillet. To same skillet add onion, garlic, salt and pepper, basil, parsley, tomato paste and wine. Stir. Simmer slowly about 1/2 hour to 45 minutes or until chicken is tender. 4 servings. (Can double recipe.)
