SCALLOPED ZUCCHINI 
4 c. zucchini, cooked and drained
1/3 c. milk
1 c. cream of chicken or mushroom soup
1 egg, beaten
1/2 c. chopped onion (sauteed)
3/4 c. herb seasoned stuffing
1 recipe cheese topper

Stir milk into soup, blend in egg; add zucchini, onion and stuffing. Mix. Turn into 10 x 6 x 1 1/2 inch baking dish.

CHEESE TOPPER:

Finely crush 1/2 cup herb stuffing. Toss with 2 tablespoons melted butter. Mix with 1 cup grated Cheddar cheese. Bake 20 minutes at 350 degrees.
