APRICOT CHICKEN WITH WILD RICE 
1 box UNCLE BEN'S® wild rice mix
1 lb. chicken breasts, boneless & skinned
4 tbsp. butter
9 whole canned apricots, halved
1/4 c. apricot nectar
1/4 tsp. pepper

Prepare rice according to directions. When done, stir 2 tablespoons butter into the rice until melted. Coarsely chop 6 apricots and stir into rice. Put rice into a greased 9 x 13 inch baking dish. Brown chicken in remaining butter. Halve remaining apricots. Arrange chicken pieces on top of rice with apricot halves in between. Pour apricot nectar over chicken. Bake, uncovered, 40 minutes at 350 degrees. Serves 4 to 6.
