ZUCCHINI CASSEROLE | |
3 c. zucchini (chunked) 4 to 8 oz. shredded cheese 2 tbsp. butter (softened) 4 slices bread (white or wheat) 3 eggs (beaten) 1 1/2 c. milk 1/4 c. onions (minced) 1/2 tsp. salt 1/2 tsp. dry mustard 1/4 tsp. paprika Pare boil zucchini in salted water 4 or 5 minutes. Drain and pat dry. Line greased 9 inch pan with bread slices. Combine cheese, butter and zucchini and pour over bread. Combine remaining ingredients. Pour over mixture. Refrigerate 1 hour. Sprinkle top with grated cheese. Bake at 350 degrees until puffed, set and brown, 40 to 50 minutes. |
