BARB'S EASY SWEET AND SOUR
CHICKEN
 
6 chicken breasts
8 oz. apricot preserves
1 bottle Russian dressing
1 pkg. dry onion soup mix

Mix together the last 3 ingredients. Place chicken in casserole and pour sauce over chicken. Cook, covered at 350 degrees for 2 hours. Serve over white rice.

MICROWAVE VERSION: Place chicken in microwave-safe casserole with the thickest pieces of chicken facing the outside of the dish. Combine last 3 ingredients for sauce, and pour over chicken. Cover with wax paper and cook on high for 15 minutes. Turn chicken over and baste with sauce. Recover with wax paper and cook on high an additional 15 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
