RED BEANS AND RICE 
2 lbs. dried red beans, soaked overnight in water
1 lb. baked ham, cut in cubes
1 lb. mild smoked pork sausage
1 lg. onion, chopped
1/2 green pepper, chopped
2 cloves garlic, minced
2 tbsp. fresh parsley, minced
2 bay leaves
1/4 tsp. red pepper
1/8 tsp. cayenne pepper
1 tsp. thyme
1 tsp. basil
Salt and pepper to taste
Water
3 c. cooked rice

Drain the beans. Put all ingredients except the water and cooked rice in a large pot. Add enough cold water to cover and bring mixture to a boil. Lower heat and simmer uncovered 3 to 4 hours, until beans are tender. Stir occasionally and add water if mixture becomes too thick. Spoon over hot rice.
