OATMEAL MUFFINS 
1 c. Masa Harina de maize (Quaker Oats Brand)
1/2 c. sugar (raw if available)
2 1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1 egg
1/4 c. Canola oil
1 1/4 c. oats (reg. or quick)
1 c. milk
Raisins (as a many as you want or none at all)

(Or 1/2 cup Masa and 1/2 cup Blue Corn Meal).

Mix Masa and sugar. Mix baking powder, salt and soda and add to Masa and sugar. Mix well. Set aside. Beat egg and oil together. Set aside. Add the milk to the oatmeal and moisten well. Leave it set for about 5 minutes so that oats soak up milk. Add the egg and canola oil mix to oat mix. Mix well.

Fold in Masa and sugar mix to oatmeal mix. Do this by hand and mix only long enough to blend well. Do NOT over mix. Line a 2 1/2 inch muffin pan with paper baking cups. Fill 2/3 full. Bake in 375-400 degree oven for 15-20 minutes. These may be microwaved following microwave book instructions. Also, I have used my G. E. Toaster oven.

Since microwave ovens vary in power, you may need to adjust your cooking time.
