MINT WINDOW COOKIES | |
12 oz. chocolate flavored chips 1/2 stick butter 2 eggs, beaten 1 (10 oz.) colored miniature marshmallows 1 tbsp. peppermint flavors 1/2 c. pecans Melt chocolate in double boiler with butter. Take top boiler out of water and let cool about 10 minutes. Stir in beaten eggs, a little at a time, so that they don't cook. In a large bowl mix marshmallows and pecans; pour chocolate over this until well coated, be carefully no to break marshmallows. Divide into 3 amounts on wax paper that has been sprinkled with powdered sugar. Use more powdered sugar to shape into a log. Freeze and slice when you need it. |
