SPINACH MANICOTTI 
1 pkg. thawed & well drained spinach
1/2 lb. Mozzarella cheese
2 lbs. Ricotta cheese
2 eggs
1/2 c. fresh grated Parmesan (or canned)
Salt, pepper & parsley to taste

Cook manicotti noodles according to package directions, using 2 tablespoons oil in boiling water. Cool noodles slightly. Stuff noodles with cheese and spinach mixture. Place in shallow casserole pan and pour over plenty for spaghetti sauce to cover. Grate Mozzarella cheese over top. Bake in 350 degree oven until cheese browns and manicotti is cooked, about 35 minutes.
