VEGETABLE CASSEROLE 
16 oz. pkg. frozen vegetables (any kind)
4 oz. Cheddar cheese, shredded
1 c. mayonnaise
3/4 c. chopped onion
1 small can sliced water chestnuts
2/3 c. Ritz crackers, crumbled
1 1/4 sticks melted butter

Cook and drain the frozen vegetables. Place in 8 x 8 casserole. Mix them with the cheese, mayo, onion and water chestnuts. Spread Ritz crackers on top, then drizzle melted butter over the top.

Bake at 350°F for 30 minutes.
