PINEAPPLE-ORANGE SUNSHINE CAKE 
1 box yellow cake mix
1/4 c. applesauce
4 eggs
1 (11 oz.) can mandarin oranges in syrup

Frosting:

1 (8 oz.) light Cool Whip
3.4 oz. pkg. vanilla pudding mix
1 can crushed pineapple

Preheat oven to 350°F. In a bowl, stir together cake mix, applesauce, eggs and mandarin oranges (including syrup) until moist. Beat by hand 2 minutes. Coat a 9 x 13-inch cake pan with cooking spray. Pour batter into pan.

Bake 30 to 40 minutes or until toothpick inserted comes out clean. Cool completely before frosting.

Combine all frosting ingredients in a large bowl and mix until well blended. Spread over cake.

Yield: 16 servings.
