TURKEY SOUP 
1 turkey carcass
3 chicken bouillon cubes
1 1/2 tsp. salt
1 c. finely diced carrots
1 c. finely chopped celery
2 med. chopped onions
3 tbsp. barley or rice
1/2 c. chopped cold turkey

Cook carcass with bouillon cubes in water. Add salt and simmer 1 1/2 hours; strain. Add the rest of ingredients. Cook until vegetables are tender. Sprinkle with chopped parsley.
