TACO SALAD 
2 carrots, shredded
1 head lettuce, broken in pieces
2 or 3 tomatoes, cut in chunks
2 cucumbers, sliced
1/2 bell pepper, chopped in 1/2 inch pieces
1 stalk celery, chopped in 1/2 inch pieces
3 stalks green onions, chopped in 1/2 inch pieces
1 can red kidney beans (including water)
1 bottle Catalina dressing
1 bag Fritos (chili-cheese flavor)

In a large salad bowl combine all ingredients except kidney beans, dressing and Fritos. Chill until ready to serve. Then add remaining ingredients. Fritos will become soggy if added too soon. Goes great with Mexican food.
