BAKED BROCCOLI 
3 1/4 c. broccoli and cut up stalk
1/4 c. chopped green onion
1/4 c. chopped pimento
3 eggs
1 c. skim milk
1/2 c. low fat cottage cheese
3 tbsp. Parmesan cheese
Salt and pepper to taste

Lightly steam broccoli until tender. Arrange broccoli, onion, and pimento in 2 quart casserole coated with non-stick spray. In blender combine egg, milk, cottage cheese and Parmesan cheese. Pour over broccoli.

Bake 35 minutes or until knife inserted comes out clean at 350 degrees.
