SWEET POTATO TURNOVERS | |
3 1/2 c. plain flour 1 c. sugar 2 tsp. baking powder 1/2 tsp. baking soda 2 eggs, beaten 1/2 c. evaporated milk 1 stick of butter Sift flour. Add sugar, baking powder and soda. Then add beaten eggs and milk. Roll out dough on floured surface. Then cut is 6 inch diameter circle. Put about 2 1/2 tablespoons of filling in center. Fold over and seal with fork. Put on ungreased cookie sheet and bake at 400 degrees until brown. FILLING: 3 c. sweet potatoes 1 c. sugar 1 1/2 stick butter 2 tbsp. vanilla 1 sm. pinch of salt 1 tsp. nutmeg Boil sweet potatoes until tender and mash. (Or if using canned potatoes, just measure and mash.) Add sugar, melted butter, vanilla, nutmeg and salt. Mix well. |
