BROILED ZUCCHINI 
2 med. zucchini, cut in half lengthwise
2 tbsp. tomato juice
Salt and pepper to taste
1 oz. Parmesan cheese

Place zucchini, cut side up in a small baking dish. Spread with tomato juice. Season with salt and pepper. Broil 4 inches from source of heat until tender, crisp. Remove from oven. Sprinkle with cheese. Return to broil until cheese melts. Makes 1 serving.
