CHOCOLATE MINT MERINGUES 
3 egg whites (at least 3 days old)
1 tsp. vinegar
1 c. granulated sugar
4 - 8 drops green food coloring
4 - 8 drops peppermint flavoring
12 oz. pkg. chocolate chips (regular or mini)

Preheat oven to 350 degrees before beginning. Beat egg whites very well. Slowly add vinegar. Add sugar in small amounts and beat between additions. Add coloring and flavoring. Fold in chocolate chips by hand. Drop by teaspoon on lightly greased cookie sheets and place in 350 degree oven. Immediately turn off oven and leave in overnight. Don't peek! Take out in morning. May be made in advance and frozen.
