SPINACH SALAD WITH SHALLOT
VINAIGRETTE
 
1 pkg. fresh spinach
10 oz. fresh mushrooms
1 sm. red onion
1/4 c. sherry wine vinegar
1 tbsp. country style Dijon mustard
1 tbsp. minced fresh parsley
1 tbsp. minced shallots
1/2 tsp. dried basil
1/4 c. olive oil
2 tbsp. vegetable oil
Salt and pepper to taste

Wash spinach and tear leaves into a bowl. Slice mushrooms and onion and add to spinach. Put remaining ingredients, except oils in a jar. Shake vigorously. Add oils and shake again. Let stand at least 15 minutes before using. Pour dressing over spinach and toss. Vinaigrette makes about 3/4 cup.
