1 1/2 c. Wesson oil
2 1/2 c. white sugar
3/4 tsp. salt
1 tsp. vanilla
1 1/2 c. mashed bananas
1 c. coconut
3 c. flour
1 tsp. baking soda
1/2 c. buttermilk
3 eggs
1 c. nuts, walnuts or pecans

Stir in nuts and coconut last. Bake at 325 degrees for 1 1/2 hours. Use caramel icing or the following Cream Cheese Icing.

CREAM CHEESE ICING:

8 oz. cream cheese, room temperature
1/2 stick butter
1 box xxx sugar
1 c. grated nuts
1 tsp. vanilla
