BANANA POUND CAKE | |
1 c. butter 1 1/2 c. sugar 4 eggs 1 c. (3 med.) ripe bananas, mashed 1 tsp. vanilla 2 1/2 c. sifted enriched all-purpose flour 1 tsp. baking powder 1/2 tsp. cinnamon In a large bowl, cream butter with sugar. Beat in eggs, one at a time, beating well after each addition. Blend in bananas and vanilla. Sift together flour, baking powder and cinnamon; blend into banana mixture. Turn into a greased and floured 9 inch tube or bundt pan. Bake in 350 degree oven for 55 minutes or until a cake tester inserted in cake comes out clean. Cool 10 minutes; turn out of pan and cool completely. If desired, serve sprinkled with confectioners' sugar. Makes 12 servings. HINT: Ripe bananas may be frozen whole and then used for baking when they are thawed. |
