BRAZIL NUT FRUIT CAKE 
3 c. Brazil nuts (1 lb. shelled - 2 lbs. unshelled)
1 lb. pitted dates
1 c. maraschino cherries (drained)
3/4 c. flour
3/4 c. sugar
1/2 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
3 eggs

Put nuts, dates and cherries in large bowl. Sift all dry ingredients over nuts and fruit in bowl. Mix by hand to make sure all fruit and nuts are covered.

Beat eggs until foamy, add vanilla. Stir into nut mixture until well blended. Pour into well greased loaf pan. Also line the loaf pan with wax paper. Spread evenly. Bake in slow oven, 300 degrees, for 1 hour and 45 minutes.
