FRUIT 'N NUT BRAN MUFFINS 
2 c. 100% bran cereal (all bran)
1 c. milk
1 c. all purpose flour
1/3 c. firmly packed brown sugar
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 c. butter, melted
1 egg, beaten
2/3 to 1 c. mashed bananas or applesauce
1/3 c. chopped pecan or walnuts

In medium bowl, combine bran and milk; let it stand 5 minutes. In a small bowl, combine flour, spices, sugar, baking powder, and baking soda; set aside. Stir fruit, nuts, butter, and egg into bran mixture. Stir in flour mixture just until blended. Spoon batter into greased 2 1/2 inch muffin pan cups. Bake at 400 degrees for 20-25 minutes.
