CHICKEN CACCIATORE 
4 chicken breasts, boned and skinned
2 tbsp. butter
1/2 c. chicken broth
1/2 c. water
1 c. sliced mushrooms
1 c. sliced green pepper
1 sliced med. onion
2 c. spaghetti sauce (purchased or homemade)

Melt butter in skillet over medium heat. Add chicken breasts and broth. Cover and simmer 20 minutes. In another pan, bring water to a boil. Add mushrooms, peppers, and onion. Simmer for 5 minutes. Drain well and add spaghetti sauce. Return to heat and stir until thoroughly heated. To serve, place 3 heaping tablespoons of sauce over each chicken breast portion and serve immediately. Serves 4.

VEGETABLE SIDE DISH TIP: Steam fresh broccoli and serve with sour cream.
