CORNBREAD SKILLET CASSEROLE 
1 lb. lean ground beef
2 eggs, beaten
1 c. self-rising corn meal
1 can cream style corn (or whole kernel)
1 c. milk
1/4 c. vegetable oil
2 c. shredded Cheddar cheese
1 lg. onion, chopped
2-4 jalapeno peppers, seeded and chopped (optional)

Crumble ground beef into large skillet an brown. Drain. Stir eggs, corn meal, corn, milk, and vegetable oil together. Pour 1/2 batter into greased skillet, deep dish pie plate, or medium-sized loaf cake pan. Top evenly with ground beef, followed by cheese, onion, and peppers. Mushrooms may also be added. Pour remaining batter over the top. Bake in preheated 350 degree oven for 45-55 minutes. Let stand 5-10 minutes before cutting into wedges. Makes 6-8 servings.
