CORN AND RICE CASSEROLE 
1 c. rice
1 onion, chopped
1 bell pepper, chopped
2 ribs celery, chopped
1/2 c. butter
2 (6 oz.) cans cream style corn
Jalapeno pepper to taste
1 c. grated cheese (Cheddar)

Cook rice according to package directions (makes 3 cups). Saute onion, bell pepper and celery in butter. Add to cooked rice along with corn and peppers. Mix all except cheese and pour into casserole dish. Top with cheese. Bake at 350 degrees for 25-30 minutes.
