IRISH POTATOES 
In Ireland they say that "a day without potatoes is a day without nourishment". Plain boiled in its jacket is how most Irish eat their potatoes at least once a day. This dish is made of "old potatoes' that need a little "dressing up" before the new potatoes are ready for digging. ("Collope" means a small portion of any foodstuff.)

POTATO COLLOPS:

3 med. potatoes
1 lg. onion, chopped
Salt and pepper to taste
2 tbsp. parsley, chopped
1/4 lb. raw bacon
2 tbsp. butter
1 c. milk
3 tbsp. grated cheese

Pare potatoes and cut into thin slices. Place a layer of potatoes and onion in a greased baking dish. Sprinkle with seasonings, parsley, and diced bacon. Dot with butter. Repeat layers until all ingredients are used, finishing with potatoes. Pour in milk and sprinkle top with grated cheese. Cover and bake in preheated oven (350°F) for 45 minutes. Uncover and bake until potatoes are done and top layer is brown.
