FRESH DANDELION (SPINACH OR
ENDIVE) SALAD
 
6 to 8 strips bacon, crumbled
3 tbsp. flour
Water
3 tbsp. sugar
1 tbsp. vinegar
Salt
3 hard-boiled eggs
Fresh dandelion greens (or spinach or endive)

Brown bacon and drain. Into the bacon grease, stir in the flour. Add cold water and blend until smooth and to gravy consistency. Add sugar, vinegar and salt to taste. Simmer for 20 minutes. Allow to cool for a few minutes while slicing eggs and crumbling bacon. Pour cooked dressing over cut-up dandelion greens and top with eggs and bacon. You may use fresh endive or spinach instead of dandelions. Can also put plain lettuce.
