POTATO AND EGG PIE 
4 lg. potatoes, peeled
5-6 eggs
Ketchup
Salt, pepper and paprika
Oil

Cut potatoes into circles about 1/2-1 inch thick. Beat eggs, add a little milk, beat again. Fry potatoes in large frying pan until brown. Add eggs and continue cooking on medium heat. When bottom of potatoes and eggs are cooked, place large platter over top, flip over onto platter; slide back into pan and continue cooking until brown and when it's finished it's like a pie. Garnish with ketchup if so desired. (May add diced onion and bell pepper).
