BAYOU SALAD 
1 lb. (2 1/2 c.) peeled, cooked crawfish tails
2 c. cooked rice
1 c. sliced celery
1/2 c. quartered cherry tomatoes
1/3 c. each sliced ripe olives and diced green pepper
1/2 c. Italian salad dressing (any type salad dressing may be used)
Lettuce leaves

Combine all ingredients except lettuce in large bowl. Serve on lettuce leaves. Makes 6 servings.
