4-5 washed leaves of Bibb lettuce
4-6 sliced mushrooms
Few mandarin orange wedges (optional)
Handful of pine nuts (optional)

DRESSING:

2 tbsp. Mucky Duck or similar type mustard
2 tbsp. honey
1/3 c. white wine

TOPPING:

Parmesan cheese

Layer ingredients over Bibb leaves and place equally on 2 salad plates. This may be prepared ahead and refrigerated.

At serving time, whisk dressing ingredients and drizzle over salad. Top with freshly ground Parmesan cheese.
