BREAKFAST PANCAKES 
1/2 c. flour
2 eggs
1/2 c. milk
Pinch of nutmeg
1/2 c. butter
2 tbsp. confectioners' sugar (optional)
Juice of half a lemon (optional)

Mix flour, eggs, milk and nutmeg together. The batter will be a bit lumpy. Melt butter in frying pan (corning ware, etc.) and pour batter over butter. Bake at 425 degrees for 15-20 minutes. Top should be a golden brown. Remove from oven; sprinkle with confectioners' sugar and return to oven for few minutes. Sprinkle with lemon juice. Cut in wedges and serve.
