BREAKFAST PANCAKES 
1/2 c. nonfat dry milk
1 3/4 c. water
2 tbsp. vinegar
2 eggs
1/4 c. vegetable oil
2 c. flour
2 tbsp. sugar
2 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt

Combine dry milk and water in 4 cup measure; mix until smooth. Pour in vinegar; mix well. Let stand 5 minutes to sour.

Beat eggs in large bowl; stir in soured milk and oil. Add flour, sugar, baking powder, baking soda and salt; beat until large lumps disappear.

Heat griddle or large skillet to approximately 375 degrees. Grease lightly with oil. Pour about 1/4 cup batter for each pancake. Cook until bubbles form and edges start to dry.
