PESTO 
2 c. fresh basil leaves
4 good sized garlic cloves, peeled & chopped
1 c. shelled walnuts, pinenuts or pecans
1 c. olive oil
1 c. freshly grated Parmesan cheese
1/4 c. freshly grated Romano cheese
Salt & pepper to taste

Combine basil, garlic and nuts in the bowl of a food processor or blender and chop. Leave the motor running and add the olive oil in a slow, steady stream. Shut the motor off, add the cheeses, salt and pepper. Process briefly and combine. Makes 2 cups.
