SUPER MOIST BANANA BREAD 
1/2 c. (1 stick) butter, at room temperature
1 c. sugar
3 med. sized ripe bananas, mashed
2 eggs, separated
1/2 tsp. vanilla
1/2 tsp. lemon juice
1 tsp. baking soda
1 1/2 c. unbleached flour
1 1/2 tbsp. hot water

Butter a 9x5x3-inch loaf pan. Heat oven to 350°F. Cream butter and sugar in large bowl. add bananas, egg yolks, vanilla, lemon juice, and baking soda. Mix well. Stir in flour. Beat egg whites until stiff, then gently fold into batter until blended. Stir in hot water. Scrape into prepared pan. Bake about 45 minutes or until toothpick inserted in center comes out clean. Let cool on wire rack for 10 minutes. Turn out on rack. Cool completely. Freezes well.

This was delicious. I have made a lot of banana bread but this recipe is a cut above the rest. My only question is whether anyone has adapted it to high altitude? I think it wouldn't have to cook so long and might not turn out as dark.

I love this recipe! I did add 1 cup of chopped nuts and increased the cooking time 10 more minutes. I also increased the vanilla extract to 1 teaspoon. Thanks sooo much for sharing!!
